Ingredients
4 ozs soft margarine
6 ozs caster sugar
6 ozs self-raising flour
2 eggs
4 tablespoons milk
Grated rind of 1 lemon
Method
- Grease and line 2 lb loaf tin
- Mix all ingredients together in a bowl
- Place in tin and put in COLD oven then turn on to Gas mark 5, 190℃,
- Bake for 40 – 45 minutes until cooked.
- When cooked remove from oven and prick all over.
- Mix another 3ozs icing or caster sugar with slightly warmed juice of lemon until dissolved.
- Pour over cake.
- Leave in tin until cold.
