Auntie Betty’s Lemon Cake


4 ozs soft margarine
6 ozs caster sugar
6 ozs self-raising flour
2 eggs
4 tablespoons milk
Grated rind of 1 lemon


  1. Grease and line 2 lb loaf tin
  2. Mix all ingredients together in a bowl
  3. Place in tin and put in COLD oven then turn on to Gas mark 5, 190℃,
  4. Bake for 40 – 45 minutes until cooked.
  5. When cooked remove from oven and prick all over.
  6. Mix another 3ozs icing or caster sugar with slightly warmed juice of lemon until dissolved.
  7. Pour over cake.
  8. Leave in tin until cold.
